I would like to know if I can use any door with sliding bypass door hardware. I know the measurements, thickness, and weight need to match the hardware but am unsure if any old door will work within those parameters. Does the door need to be solid or can it be hollow?

The hardware mounts to the rear upper edge of the door, through the holes marked in the roller bracket below, using either wood-thread screws or through bolts. Your door will need to have robust enough material at that location to support its weight.
Wooden hollow-core doors usually have a solid rail there. Steel doors may be simple folded boxes, with no filler at that point. You'll have to assess your doors to know whether they'll suit. You can often learn enough by simply squeezing to see where and how they flex.
Be advised that this kit appears to be entirely steel. All kits I've installed have had nylon rollers, which are likely to be much quieter than these in operation.

You can use any door that falls withing the weight and dimensional parameters.
I have used that door kit to install many a bypass door. Some hollow some solid, different styles...all work well.
