What is the correct way to transition from galvanized steel pipe from the meter to copper water pipe in a house?

Right now there is just a union (no dielectric), so I'm wondering if I should replace with a dielectric union between the galvanized from the meter to the copper in the house. Is it a bad idea to leave as-is?

Even if building regulations in my area don’t require a dielectric in this case, I’d prefer to exceed the requirements. The house has grounding via a ground rod system, so grounding is not a concern.

Other than using a dialectic union, you can use brass to make the transition. Brass doesn't react with galvanized steel or copper. I would use a ~6" long brass nipple and then a copper FIP adaptor to complete the transition.
