That is Rhubarb, likely a hybrid/cultivar. Some varieties are more pigmented than others, and it’s not uncommon to see those such as yours, which have very little to no red pigmentation. The level of pigmentation does not correlate with the sweetness, oxalic acid levels, or ‘ripeness’ of the stems.
